Thai Prawn Puff Recipe

Preparing time: 10 minutes

Resting time: 30 minutes or more

Cooking time: 10 minutes

 

Ingredient A:

  • 5 thinly chopped red chilies.

  • 15g fresh coriander leaves

  • 2 egg whites

  • 1 tablespoon fine grated ginger

  • 2 cloves of chopped garlic

  • 1 teaspoon fish sauce

Ingredient B:

  • 750g raw fresh prawns

  • 60g rice flour or corn-flour

  • 125ml oil

  • Thai chili sauce

Methods:

  1. Peel, devein and clean the prawns

  2. Place the prawn and Ingredient A in a food processor, process for 12 seconds to mix well.

  3. Move the mixture to a bowl, put in the flour, stir and mix.

  4. Place the mixture into the fridge, for 30minutes or more.

  5. Heat oil in a frying pan.

  6. Use a teaspoon to scope the mixture (full rounded shape) and place into the hot oil.

  7. Cook for 2 minutes, turn them until all sides become golden brown, do not over cook to prevent tough.

  8. Place the puff on paper towels with strainer to drain away the oil.

Health Tips: Chili Sauce may be high in salt content, advise to use less, or use the low salt Chili sauce.
