Ingredient:
600g crab, rinse and chop into pieces
1 Onion (slices)
Red chili (pieces)
1 stalk Chinese celery (sectioned)
2 Egg (whisked)
Scallion (sectioned)
2 tablespoon Curry sauce
Cooking oil
Seasoning Ingredients:
2 teaspoon Sugar
½ teaspoon Chicken powder
½ tablespoon Caltrop starch
1 tablespoon Fish sauce
1¼ cups Water
Method:
Heat some oil in a wok. Put in onion and red chili. Stir fry for 5
minutes or until fragrant. Coat crab in caltrop starch. Put into
boiling oil and juggle for 2 minutes. Drain. Heat 2 tablespoon oil in a
wok. Add curry sauce and stir fry until fragrant. Put in the crab and
stir well. Add Chinese celery and Seasoning Ingredients. Cover with lid
and cook for 5 minutes. Put in onion, red chili and stir well for 3
minutes. Pour in the whisked eggs while stirring. Cook for 3 minutes or
until the sauce thickens. Add scallion, stir well and serve.
