Ingredient:
600g Live clams, rinse with water
Onion ½ (piece)
1 Green bell pepper (pieces)
1 Red chili (pieces)
2 cloves Garlic (grated)
Thai basil leaves
1 tablespoon Chili paste
Seasoning Ingredients:
1 teaspoon Light soy sauce
½ tablespoon Fish sauce
½ teaspoon Chicken powder
2 teaspoon Sugar
1 teaspoon Caltrop starch
¼ cup Water
Method:
Boil clam in boiling water until open, drain. Heat 1 tablespoon oil
in a wok under medium heat. Put in onion, green bell pepper and red
chili. Stir fry for 3 minutes or until fragrant, set aside. Mix well
chili paste and Seasoning Ingredients. Heat 2 tablespoon oil in a wok
under medium heat. Stir fry grated garlic for 3 minutes or until
fragrant. Sizzle with 1 teaspoon wine. Add clams, onion, green bell
pepper, red chili and Seasoning Ingredients. Stir fry for 3 minutes,
add basil leaves and mix well. Ready to serve.

Scald calms in boiling water before stir
frying helps remove the dirt and sand.
