Stewed Chicken with Dried Yam and Qi Zi Recipe

Cooking time: 2 hours 45 minutes

Ingredients:
3 chicken thigh, wash and rinse
50g dried yam, wash
50g Qi zi (Lycium), wash
2 slices ginger
2g Shaoxing wine (Chinese cooking wine)

Method:
Put the chicken in a heat proof bowl, add in boiling water, drain. Then move to a double steam pot, set aside. Soak yam and qi zi in water for 15 minutes, drain. Sprinkle on top of Chicken, together with ginger. Boil 3 cups of water, pour the water into the double steam pot, add in wine. Stew over high heat for 20 minutes, then reduce to low heat. Continue to stew for 2 hours. Add in salt and ready to serve.
