500g shrimps, remove shell and wash
4 medium size eggs
1 sprig scallion (diced)
1 ½ cup (375ml) water
1 teaspoon sugar
1 pinch salt
1 pinch pepper
Arrange shrimps at the bottom of a heat proof dish, set aside.
Whisk the eggs, then put in the seasoning ingredients follow by 1 ½
cups of water, stir well. Pour the mixture into the heat proof dish
with shrimps. Steam over low heat for 8 to 10 minutes. Sprinkle with
scallion and ready to serve.
