Prawn with Spices and Coconut Cream Recipe

Ingredient A
1.5kg (3.3lb) king prawn, remove shell and devein, keep the tail

1 medium onion, coarsely chopped

1 scallion, finely chop

 

Ingredient A

3/4 cup (170ml / 6.3 fl oz) coconut cream

1 teaspoon lemon rind

1 tablespoon lime (can be replaced with lemon juice)

1 teaspoon soy sauce

1/2 teaspoon shrimp paste

1 tablespoon oil (peanut or vegetable)


 

Method:
Mix Ingredient A in a bowl, toss well and set aside. Put onion into a frying pan with oil over medium heat, saute until onion is soft. Add prawn and continue to saute for 2.5 minutes. Put in Ingredient A mixture and stir for 3 minutes.  Garnish with scallion. Ready to serve with pasta, steam rice or fried rice.
