Madras Steak Curry / Madras Beef Curry Recipe

Preparing and cooking time : 90 minutes

 

Ingredient A:

  • 25g ground coriander

  • 5 teaspoons ground cumin

  • 1 teaspoon brown mustard seeds

  • 1/2 teaspoon cracked black peppercorns

  • 2 teaspoons chili powder (amount depend on how hot you like, mild=1teaspoon)

  • 1 teaspoon ground turmeric

  • 1/2 teaspoon salt

  • 3 teaspoons crushed garlic

  • 3 teaspoons grated ginger

Ingredient B:

  • 60g tomato paste (low salt curry tips: read the label if you buy bottled paste, no salt added)

  • 250ml beef stock

Ingredient C:

  • 1kg of chunk steak

  • 3 teaspoon white vinegar

  • 1 teaspoon oil (can replace with ghee)

  • 1 big chopped onion

 

Methods:

  1. Trim the fat and tendon from the beef, cut into 2.5cm cube.

  2. Put ingredient A into a small bowl, mix and stir. 

  3. Add vinegar, continue to stir till become smooth paste.

  4. Heat the oil in pan, at medium heat, cook onion till soft.

  5. Add spice paste and stir for 60 second.

  6. Add meat and continue to stir, until fully covered with the spices.

  7. Add ingredient B, simmer, then covered the pan for 90 minutes at medium heat.

  8. May serve together with rice, or roasted flat bread depend on your favorite.
