King Prawn with Peanuts Recipe

Cooking time: 3 minutes

1.25kg / 2.5 lb raw king prawns, peel and devein, leaving the tails intact
4 spring onions, chopped
1 clove garlic, crushed
1 teaspoon grated fresh ginger
1 teaspoon sambal oelek
1 teaspoon ground coriander
˝ teaspoon ground turmeric
1 teaspoon grated lemon rind
1 tablespoon lemon jice
2/3 cup / 110 g / 3 2/3 oz chopped unsalted roasted peanuts
2 tablespoons oil (prefer peanut)

Mix the prawn with Ingredient A, cover and chilled at fridge for 1~2 hours. Heat the oil in a frying pan, add the prawn mixture and sauté for 3 minutes over high heat. Ready to serve.
