Bamboo Shoot Salad Recipe

Ingredients:
600g Green Bamboo shoots, rinse
150g Low Sodium Mayonnaise

Method:
Put bamboo shoot in a saucepan, put in water to fully cover the bamboo shoots. Heat up the water over medium heat, after boiling, change to low heat and continue to cook for 40 minutes. Remove from heat. Prepare a big bowl of ice water, put the bamboo shoot into the water. Remove the outer layer of the bamboo shoot. Then slice into serving pieces. Keep inside the fridge for 15 minutes. Put it onto a serving plate and spread the mayonnaise on top. Ready to serve cold.
