Ingredients:
300g Green house cucumber, peel and rinse, cut into strips
2 Dried scallops, rinse
1 ½ tablespoon peanut oil
Seasoning ingredient:
¼ tablespoon Salt
2 tablespoon Caltrop starch
½ cup Chicken stock
Sesame oil
Ground white pepper
Method:
Put scallops into a bowl. Add water to cover and steam for 30
minutes. Let cool and tear into shreds. Heat 1 tablespoon oil in a pan
or wok under medium heat. Put in cucumber strips and stir fry for 5
minutes or until they just turn
translucent. Arrange on a serving plate. Heat ½ tablespoon oil in a pan
or wok. Stir fry shredded dried scallops for 3 minutes. Add seasoning and stir well.
Pour on top of the cucumbers and serve.
Health tips:
Cucumber contain plenty of water and low
in calories, suitable for slimming purpose. Besides, it could reduce
body heat, suitable to lessen fever effect and dried throat symptom.
