Stir Fried Cucumber with Dried Scallops Recipe

Ingredients:
300g Green house cucumber, peel and rinse, cut into strips
2 Dried scallops, rinse
1 ½ tablespoon peanut oil

Seasoning ingredient:
¼ tablespoon Salt
2 tablespoon Caltrop starch
½ cup Chicken stock
Sesame oil
Ground white pepper

Method:
Put scallops into a bowl. Add water to cover and steam for 30 minutes. Let cool and tear into shreds. Heat 1 tablespoon oil in a pan or wok under medium heat. Put in cucumber strips and stir fry for 5 minutes or until they just turn translucent. Arrange on a serving plate. Heat ½ tablespoon oil in a pan or wok. Stir fry shredded dried scallops for 3 minutes. Add seasoning and stir well. Pour on top of the cucumbers and serve.

Cucumber contain plenty of water and low in calories, suitable for slimming purpose. Besides, it could reduce body heat, suitable to lessen fever effect and dried throat symptom.
