Stir Fried Amaranth with Ginger Recipe

750g Amaranth rinse and sectioned
2 clove garlic, finely chopped
10g fresh ginger, grated
125ml (˝ cup) water
Seasoning Ingredients:
˝ tablespoon oil
1 pinch salt

Heat up oil in wok or frying pan, sauté ginger and garlic for 3 minutes or until fragrant. Add in water and all seasoning ingredient, bring to boil. Add in amaranth and stir fried for 1 minute. Ready to serve.

Health Tips:

The amaranth leaf is also known as Chinese spinach. The nutrition value of calcium, iron, and phosphorus is higher as compare to spinach. This dish also being cooked with less oil, well fit into a weight control diet.
