Steamed Sea Cucumber with dried black mushroom and pork Recipe

Main Ingredients:
225g soaked sea cucumber, wash and cut into pieces
75g lean pork, wash and cut into slices
2 slices ginger, chopped
red chilli, chopped
2 dried black mushrooms
2 stalks Chinese celery

Marinade ingredients:
1 teaspoon light soy sauce
1 teaspoon cornflour
1 teaspoon oil

Seasoning ingredients:
1 teaspoon light soy sauce

Method:
Soak dried black mushrooms in water until soft, cut the hard stalks. Shred the soft remaining. Mix lean pork with dried black mushrooms and seasoning ingredient. Let season for at least 10 minutes. Scald the sparerib: put the sparerib in a heat proof bowl, add in boiling water, drain. And cut into pieces. Keep the stems of Chinese celery only. Wash and cut into short sections. Place sea cucumber onto plate. Put dried black mushrooms, lean pork and ginger on top. Steam over high heat for 10 minutes. Put in Chinese celery and steam for 3 minutes. Pour seasoning onto the ingredients and serve.

Health tips:
This dish use less oil and sugar and therefore low in cholesterol. It is healthy and easy to digest so it is suitable for both the elderly and children and people those in slimming program. Patient suffer from gout should not consume dried black mushrooms.
