Low Fat Wintermelon with Dried Scallops Recipe

Number of serving: 4

Preparation time: 10 minutes + 60 minutes soaking time

Cooking time: 43 minutes


Ingredients:
625g wintermelon, peel and seed, shred
2 big size (6 small size) dried scallops, wash
2 slices fresh ginger, finely chopped
1 teaspoon oil

Seasoning ingredients:
1 pinch salt
1 teaspoon cornflour
2 tablespoons water

Method:
Soak dried scallop in 125ml of water for 60 minutes. Crush scallop with spoon to become shreds, keep the soaking liquid.. Place winter meter in a heat proof bowl, steam for 25 minutes, drain the liquid to another bowl for later use. Heat oil in the wok over medium heat. Add ginger and shredded scallops. Stir fry for 5 minutes or until fragrant. Put in the scallop soaking liquid and winter melon liquid. Change to low heat and let simmer for 10 minutes. Add seasoning ingredients and continue to cook for 3 mintues. Pour mixture sauce onto wintermelon. Ready to serve.

This is a typical low fat, high fiber and low carbohydrate dish.

Cooking Tips:
The Wintermelons could be replaced by cucumbers or Chinese marrows and you could get the similar taste.
