Udon Noodle Soup Recipe

Cooking time: 15 minutes

 

Ingredient A:

  • 150g thinly slice port loin

  • 125ml Japanese soy sauce

  • 3 tablespoons mirin

  • 5 spring onions, thinly chopped

Ingredient B:

  • 450g dried udon noodles

  • 1 litre water

  • 3 tablespoons dashi granules

  • 3 medium leeks (white and green parts only), thinly slice

  • Shichimi Togarashi

Methods:

  1. Boil the water in pot, put in the noodles and boil for 5 minutes.

  2. Remove the noodles and set aside.

  3. Boil water and dashi in a pan.

  4. Add leeks and simmer for 5 minutes at low heat.

  5. Add Ingredient A, then simmer for 2 minutes to cook the pork slices.

  6. Segregate the noodles to 4 different bowls and pour in the soup.

  7. Put in spring onion and shower the Shichimi Togarashi on top.

Health tips: This is low fat dish (about 5g or less fat per serving)
