Green Beans with Sesame Seed Sauce Recipe

Number of serving: 4 (light meal as starter)

Preparing and cooking time : 25 minutes

 

Ingredient A:

  • 3 slice of fresh ginger, cut into about 5cm (2inch) size

  • 1 tablespoon Japanese soy sauce

  • 1 tablespoon mirin

  • 3 tablespoon sugar

Ingredient B:

  • 500g (1lb) trimmed slender green beans

  • 2.5 tablespoons Japanese white sesame seeds

Methods:

  1. Boil the water in pot, put in the bean and cook for 2 minutes.

  2. Removed the bean and put into iced water for 20 second. 

  3. Removed the bean and set aside.

  4. Heat a pan at medium heat, put in the sesame seeds and toast for 5 minutes, continuously stir or shake the pan, until sesame seeds become golden brown.

  5. Remove 1 teaspoon of the sesame and set aside.  Put the rest of the sesame seeds into a pounder, pound until a paste mixture of oil and seeds is formed.

  6. Mix the sesame seed paste with ingredient A.

  7. Pour the mixture sauce over the beans.

  8. Scatter the 1 teaspoon non-pounded sesame seeds over the beans.

  9. If prefer more flavorful bean,  marinate the beans overnight.
