Ingredients:
375g veal ribs, rinse and drain, cut into big pieces
½ onion
½ red bell pepper (cut into wedges)
1 slice pineapple (cut into pieces)
1 sprig spring onion (sectioned)
Marinade ingredients:
1 egg yolk
1 tablespoon caltrop starch
½ teaspoon sugar
2 teaspoons light soy sauce
1 teaspoon chicken powder
Thickening glaze ingredients:
2 tablespoons OK sauce
½ tablespoon Worcestarshire sauce
1 tablespoon ketchup
1 tablespoon water
1 teaspoon sesame oil
Ground white pepper
Method:
Marinate ribs for 30 minutes with the marinade ingredient. Drain
off the sauce. Deep fry in boiling oil until lightly browned. Drain.
Heat 2 tablespoons oil in a frying pan or wok. Stir fry onion,
pineapple and red bell pepper for 3 minutes or until fragrant. Sizzle
with 1 teaspoon wine. Add thickening glaze and bring to the boil. Put
in veal ribs and spring onion, stir well. Ready to serve.
Cooking tips:
The egg yolk in the marinade helps tenderize the meat.
