Stir Fried Beef Shin in Broad Bean Paste Recipe

300g gold coin beef shin, rinse and drain, thinly slice
75g snow peas, rinse and drain, remove both tips and tough vein
58g carrot, thinly slice
1 tablespoon board bean paste
1 clove garlic (grated)

1 tablespoon cooking oil

Marinade ingredients:
teaspoon sugar
tablespoon caltrop starch
tablespoon light soy sauce
tablespoon oil

Seasoning ingredients:
teaspoon salt
teaspoon caltrop starch
2 tablespoons water

Marinate beef shin with marinade ingredient for 15 minutes. Cook carrot and snow peas in boiling water for 3 minutes. Rinse and drain. Heat 1 tablespoon oil in a wok. Stir fry garlic and board bean paste for 3 minutes or until fragrant. Add beef shin and stir fry until done. Put in carrot and snow peas. Stir fry 1 minutes. Add seasoning and stir well. Ready to serve.

Cooking tips:
Board Bean Paste (also called Douban Jiang or Candou Jiang) is one of the important ingredient in Chinese Sichuan. Could be found in Asian Food Market.
