Ingredients:
300g gold coin beef shin, rinse and drain, thinly slice
75g snow peas, rinse and drain, remove both tips and tough vein
58g carrot, thinly slice
1 tablespoon board bean paste
1 clove garlic (grated)
1 tablespoon cooking oil
Marinade ingredients:
½ teaspoon sugar
½ tablespoon caltrop starch
½ tablespoon light soy sauce
½ tablespoon oil
Seasoning ingredients:
¼ teaspoon salt
½ teaspoon caltrop starch
2 tablespoons water
Method:
Marinate beef shin with marinade ingredient for 15 minutes. Cook
carrot and snow peas in boiling water for 3 minutes. Rinse and drain.
Heat 1 tablespoon oil in a wok. Stir fry garlic and board bean paste
for 3 minutes or until fragrant. Add beef shin and stir fry until done.
Put in carrot and snow peas. Stir fry 1 minutes. Add seasoning and stir
well. Ready to serve.
Cooking tips:
Board Bean Paste (also called Douban Jiang or Candou Jiang) is one
of the important ingredient in Chinese Sichuan. Could be found in Asian
Food Market.
