Spicy Roasted Chicken Recipe

Ingredients A
1.6kg / 3 lb chicken, cut into half along breastbone, remove the backbone
30g / 1 oz butter, chopped

Ingredient B
3 teaspoons chopped red chillies
3 cloves garlic
2 teaspoons peppercorns, crushed
2 teaspoons soft brown sugar

Ingredient C
2 tablespoons soy sauce
2 teaspoons ground turmeric
1 tablespoon lime juice

Preheat the oven to moderate 180C / 350F. Place the chicken on a rack in a baking dish with skin side up, tuck the chicken wing underneath, bake for 30 minutes. Mix Ingredient B in a food processor and process until smooth. Add the Ingredient C, and process briefly until well mix. Brush the spice mixture over the chicken, patch it with butter pieces and bake for another 25 minutes or until color turn red. Ready to serve.
