Ingredient A:
2 teaspoons chilli flakes
4 stems lemon grass (white part only), thinly chopped
2 slices fresh galangal, thinly chopped
2 slices fresh turmeric, thinly chopped
4 cloves garlic, crushed
4 teaspoons grated palm sugar or soft brown sugar
1/2 cup (125 m1/4 fl oz) oyster sauce
1 teaspoon salt
2 tablespoons oil
Ingredient B:
500 g (1 lb) sirloin steak, cut into long thin strips
Woden skewer, about 20cm (8 inch) long, soaked in water for 30 minutes
Method:
Process Ingredient A in a food processor until become well mixed
paste. Add the spice paste to the steak in a bowl, toss to coat. Wrap
the bowl with plastic wrap and put in to fridge for 3 to 5 hours to
marinate. Arrange and tread the steak meat onto wooden skewers. Preheat
the grill to hot (can use electric or charcoal barbecue grill as well);
grill the skewered steak on both sides until turn to brown in color.
