Deep Fried Shrimps with Mint Recipe

Ingredients:
375g Medium shrimps, shell and devein, keep shells on tail
5 stalks Fresh mint leaves, discard the stems, rinse and drain
Caltrop starch

Seasoning Ingredients:
2 teaspoon Sugar
5 tablespoon Italian salad dressing

Marinade Ingredients:
½ teaspoon Salt
½ teaspoon Sugar
½ teaspoon Chicken powder
½ teaspoon Caltrop starch
1 tablespoon Egg white
Ground white pepper

Method:
Marinate shrimps with marinade ingredients for 15 minutes. Then, coat the shrimps with thin layer of caltrop starch. Put into boiling oil and jiggle quickly. Drain with paper towel. Deep fry mint in the same boiling oil for 15 second. Drain with paper towel and arrange on a plate. Bring seasoning ingredient to the boil over low heat. Toss the shrimps in the Seasoning Ingredients. Serve immediately.
 

Cooking tips:

Shelled shrimps cook faster than unshelled ones. Therefore, do not cook over high heat or they would taste dry and bland. Mint leaves turn transparent after being deep fried. .
