Ingredients:
1 chicken thigh, remove bone, rinse and drain
Thai chicken sauce
Oil, for deep frying
Marinade Ingredients:
1 Egg yolk
Lemongrass (finely chopped)
2 cloves Garlic (grated)
1 teaspoon Ginger (grated)
2 stalks Coriander (finely chopped)
2 cloves Shallots (finely chopped)
2 tablespoon Fish sauce
¼ teaspoon Salt
2 tablespoon
Caltrop starch
3 tablespoon Rice flour
Method:
Cut chicken into 4 pieces. Mix well with marinade ingredients, toss to
coat the chicken. Marinate for 15 to 30 minutes. Heat oil in a wok or
pan under medium heat. Put in chicken and deep fry for 15 minutes or
until golden color. Drain with Paper towel. Serve with Thai chicken
sauce.
