Total Cooking time: 35 minutes

Ingredients:
600g Pork belly or spareribs, remove hair, rinse and cut into slices
5 cloves Shallot

4 slices Ginger
2 pieces Scallion (sectioned)

Seasoning Ingredients:
19g Rock sugar
cup Light soy sauce

Method:
Heat 1 tablespoon oil in a wok. Put in pork belly and sear until golden brown on all sides. Add shallot, ginger slices and stir fry for 3 minutes or until fragrant. Sizzle with wine. Cooking tips:

In this recipe, the meat is seared in oil rather than scalded in water. It adds a light caramel taste to the meat.
