Ingredients:
600g Pork belly or spareribs, remove hair, rinse and cut into slices
5 cloves Shallot
½ cup Shaoxing wine (Chinese cooking wine, could be replaced with white
wine)
4 slices Ginger
2 pieces Scallion (sectioned)
Seasoning Ingredients:
19g Rock sugar
¼ cup Light soy sauce
Method:
Heat 1 tablespoon oil in a wok. Put in pork belly and sear until
golden brown on all sides. Add shallot, ginger slices and stir fry for
3 minutes or until fragrant. Sizzle with wine. Add Seasoning
Ingredients and bring to the boil. Reduce to low heat and simmer for 30
minutes or until the sauce reduces to 1/3 of its original volume.
Sprinkle scallion on top and serve.
Cooking tips:
In this recipe, the meat is seared in oil
rather than scalded in water. It adds a light caramel taste to the
meat.
