Ingredient A
500g / 1 bl beef eye fillet
3 tablespoons peanut or vegetable oil
˝ cup / 45g 1 ˝ oz desiccated coconut
3 spring onions, finely cut into strips
˝ cup / 125ml / 4 fl oz coconut milk
Ingredient B
2 cloves garlic, crushed
2 teaspoons finely grated lemon rind
1 teaspoon grated fresh ginger
2 teaspoon ground coriander
˝ teaspoon ground turmeric
2 teaspoon grated palm sugar or soft brown sugar
Method:
Cut the beef into thin slices. Mix together the Ingredient B and 2
tablespoons oil, add the beef and toss to coat. Cover and chilled for 1
to 2 hours. Heat 1 tablespoon oil in a pan; add the beef and sauté
until turn brown in color. Add the coconut and spring onion and stir
fry for 1 minute. Add the coconut milk and stir until boil. Ready to
serve, could be serve together with pasta or rice.
