Bake Lemon Chicken Recipe

Ingredient A
2 kg / 4 lb chickens, clean and cut into small pieces with the bone intact. Dry with paper towels.

Ingredient B
2 medium onions, chopped
1 spring onions, chopped
2 red chillies, chopped
2 cloves garlic, crushed
¼ cup / 60 ml / 2 fl oz peanut oil
¼ cup / 60 ml / 2 fl oz lemon juice

Method:
Combine the Ingredient B in a food processor and process until become smooth paste. Add the paste to the chickens, toss to coat well. Cover and chilled for at least 1 hours or overnight to marinate. Preheat the oven to moderate 180°C / 350’F. Remove the chickens from marinade. Place the chicken in a baking dish, single layer. Bake for 40 minutes until cooked an browned, brush occasionally with the marinade paste. Serve with rice, noodles or pasta.
