White Fungus with Rock Sugar Soup Recipe

Ingredients:
60g white fungus (snow fungus)
1 liter (4 cups) water

Seasoning Ingredients:
40g Rock sugar (may add or reduced to taste)

Method:
Soak white fungus in warm water until soft, cut and remove the stalks. Steam the fungus for 10 minutes and set aside. Heat a saucepan or ceramic pot. Pour in water, follow by the rock sugar. Cook over medium heat until rock sugar melts. Put in white fungus, change to low heat and continue to cook until the drink become thick. Ready to serve hot, warm or chilled.

Healthy tips:
This drink is a mild laxative for constipation patients because it helps to lubricate the colon and promote peristalsis. White fungus contain Vitamin C, iron and calcium, it also believed to be able to heal dry coughs and reduce lung’s heat by Chinese.
