Tomato Fish with Onion Recipe

Ingredients:
250g firm fish fillet
½ onion, chopped
2 tomatoes, cut into pieces

Marinade Ingredients:
2 pinch salt

Seasoning Ingredients:
½ teaspoon cornflour
1 tablespoon tomato sauce
½ teaspoon sugar
4 tablespoons water

Method:
Mix fish fillet with marinade ingredients and let marinate for at least 10 minutes. Sprinkle cornflour to the fish. Heat up a wok under medium heat, put in fish and fry for 5 minutes or until light brown. Remove fish. Heat ½ tablespoon of oil under medium heat, put in onion and stir fry for 2 minutes until fragrant. Put in tomatoes and continue to stir fry. Add seasoning ingredients and bring to the boil. Put in the fried fish and continue to cook for 1 minute. Remove and ready to serve.

Fishes like cod, salmon, white cod and flatfish contain a lot of Omega 3 which is good for the health. For people who have high blood cholesterol level and overweight, the fish should be steamed instead of frying. Tomato is rich of lycopene, an powerful antioxidant that believe to be able to prevent cancer.
