Stir Fried Corn and Vegetarian Shrimps Recipe

Preparing time: 5 minutes

Cooking time: 14 minutes

5 dried black mushrooms, soak in water until soft
500g corn (without cob)
100g Edamame (young soy beans)
50g vegetarian shrimps
1 tablespoon olive oil

Seasoning Ingredients:
1 teaspoon sesame oil
teaspoon salt
1 pinch pepper

Finely cut the mushroom, reserve the mushroom soaking water for later use. Cook Edamame in boiling water for 5 minutes, set aside. Heat up oil over medium heat, saute mushroom for 2 mintues or until fragrant. Put in corn and continue to saute for 1 minutes. Pour in half of the mushroom soaking water, cook over high heat for 3 minutes or until the liquid reduces. Put in edamame and vegetarian shrimps. Continue to stir fry for 1 minutes. Add seasoning ingredients and stir for 10 seconds. Ready to serve.

Cooking tips:

Vegetarian Shrimps could be replace with fish cake.
