Broccoli and Cauliflower with Apple Mint and Cider Recipe

Cooking time: 15 minutes


Ingredient A:

  • 2 chopped onions

  • 2 chopped carrots

  • 2 cloves finely chopped garlic

  • 1 tablespoon dill seed

  • 4 large sprigs apple mint

  • 2 tablespoon olive oil

Ingredient B:

  • 2 tablespoons tamari

  • 2 tablespoons mint jelly

Ingredient C:

  • 2 tablespoons rice or corn flour

  • 300ml dry cider

  • 600g broccoli florets

  • 500g cauliflower florets


  1. Boil the cauliflower and broccoli until tender.  Remove the vegetable into a large salad bowl.

  2. With a new pan, mix and saute ingredient A until nearly cooked.

  3. Stir in the flour and cook for another 1 minutes.

  4. Put in the cider and simmer until the sauce slightly thickening.

  5. Pour the sauce into a food processor and add Ingredient B.

  6. Process until finely crushed.

  7. Pour the mixture over the vegetable.
