Balti Cauliflower and Tomatoes Recipe

Number of serving: 4

Cooking time: 15 minutes

 

Ingredient A:

  • 1 teaspoon ground coriander

  • 1 teaspoon ground cumin

  • 1 teaspoon fennel seeds

  • 1/2 teaspoon masala salt

  • 1/3 teaspoon of ground ginger

  • 1/2 teaspoon chili powder

Ingredient B:

  • 5 plum tomatoes, peeled, seeded and separated to quarters

  • 175ml water

  • 1 teaspoon salt

  • 1 teaspoon black pepper

Ingredient C:

  • 2 tablespoons olive or grape seed oil

  • 1 chopped onions

  • 3 cloves of crushed garlic

  • 800g cauliflower florets

  • 175g chopped fresh spinach

  • 2 tablespoon lemon juice

Methods:

  1. Heat oil in large frying pan.

  2. At high heat, stir fry onion and garlic for 2 minutes.

  3. Add cauliflower and stir for 3 minutes.

  4. Add Ingredient A and stir for another 1 minutes.

  5. Add Ingredient B and bring to boil.  Then reduce to low heat to simmer for 6 minutes until cauliflower is tender.

  6. Stir in the spinach, cover and cook another 1 minutes.

  7. Add lemon juice and ready to server.

Health Tips: Cauliflower that famous with it's phyto-chemical, and tomato that rich in antioxidant and lycopene are believed to be a good source of cancer prevention food.
