Winter Melon in Red Wine Recipe

Number of serving: 4

Preparation time: 5 minutes

Cooking time: 10 minutes


Ingredients:
1kg winter melon
10g Jinhua ham (could be replaced with bacon)
60ml red wine
10g raisin
1 teaspoon sugar
250ml (1 cup) stock (vegetable, fish or chicken could be used)

Thickening Sauce ingredients:
1 teaspoon corn flour
2 tablespoon water
(mix well in a bowl)

Method:
Scoop out winter melon with a spoon to make ball shape (ice cream size). Set aside. Put winter melon balls in a saucepan. Put in red wine, raisins and sugar. Cook over medium heat for 5 minutes. Put winter melon balls onto a serving plate. Set aside. Put stock and Jinhua ham in a new saucepan and bring to boil. Thicken with thickening sauce. Remove from heat. Pour the sauce onto winter melon balls. Serve.
