Ingredients:
250g shrimps, remove shell
1 egg white
1 tablespoon corn flour
˝ red bell pepper (Capsicum), cut to bite size
˝ yellow bell pepper(Capsicum), cut to bite size
50g snow peas
50g pine nuts
˝ sprig Spring onion, coarsely chopped
5 slice ginger
1 tablespoon vegetable oil
Seasoning Ingredients:
˝ teaspoon Salt
˝ teaspoon ground bonito
Thickening Sauce ingredients:
1 teaspoon corn flour
2 tablespoon water
(mix well in a bowl)
Method:
Marinate shrimps with egg white and caltrop starch. Cut red and
yellow bell peppers into pieces. Heat up 1 tablespoon oil in the frying
pan, sauté ginger and spring onion for 3 minutes or until fragrant. Put
in the shrimp, bell peppers and snow peas, stir well and add seasoning
ingredients, continue to stir fry for 3 minutes. Stir in thickening
sauce and cook for 10 second. Move to serving plate and spread roasted
pine nuts on top. Ready to Serve.
