Ingredients:
375g Pumpkin
150g minced fish, ready made from Asian Store (or minced white fish
fillet with food processor)
1 clove grated garlic
1 teaspoon grated ginger
3 tablespoon oil
Scallion, chopped
Seasoning Ingredients:
¼ tablespoon Sugar
1 tablespoon Fish source
¼ cup Water
Thickening Glaze
½ teaspoon Caltrop starch
2 tablespoon Water
Method:
Peel and seed off the pumpkin. Rinse and cut into strips. Heat 2
tablespoon oil in a pan or wok. Put in minced fish. Press it into a
flat patty with a spatula. Fry until both sides turn to golden. Drain
and cut into strips. Heat 1 tablespoon oil in a pan or wok. Stir
fry grated garlic and ginger. Add pumpkin and stir fry briefly. Add
seasoning ingredient and cook for 5 minutes. Put fish strips into the
wok. Add thickening glaze while stirring continuously. Sprinkle
scallion on top. Mix well and serve.
