Stir Fried Beef with Tomatoes Eggs Recipe

Number of serving: 4

Preparation time: 10 minutes +  30minutes marinate

Cooking time: 8 minutes

 

Ingredients:
125g beef fillet, thinly slice
3 pieces eggs
2 pieces tomatoes, wash and slice
3 cloves garlic (skinned), finely chopped
¼ teaspoon salt
1 teaspoon light soy sauce
1 ½ tablespoon oil

Marinade Ingredients:
1 tablespoon light soy sauce
1 tablespoon water
1 teaspoon cornflour

Method:
Mix beef with marinade ingredient and set aside for 30 minutes to 2 hours, may place in the fridge. Whisk the egg together with 1 teaspoon light soy sauce. Heat up oil in wok over medium heat. Add eggs and stir fry until near set. Remove from wok and put another ½ tablespoon of oil into the wok. Put garlic and beef, sauté for 5 minutes or until cooked. Add tomatoes and stir fry for 2 minutes. Put in eggs and stir fry for 30 second. Ready to serve.

Health Tips:
The beef could be replaced with deer or tenderloin. For healthier choice, white meat like chicken could be used. Do not include the egg yolk if cholesterol is the health concern.
