Stewed Roasted Pork Belly with Winter Melon Recipe

Ingredients:
225g Roasted pork belly, choose less fat portion
375g Winter melon , peel and seed off, cut to pieces
19g White fungus, soak in water until soft, rinse and remove stems
1 clove Garlic (sliced)

Seasoning Ingredients:
¼ teaspoon Salt
½ teaspoon Sugar
1 cup Stock
Sesame oil
Ground white pepper

Thickening Glaze:
2 teaspoon corn flour mixed with 1 tablespoon water

Method:
Heat 1 tablespoon oil in a clay pot. Stir fry garlic for 2 minutes or until fragrant. Put in roasted pork belly. Fry for 5 minutes or until light golden. Add Seasoning Ingredients, winter melon and white fungus. Mix well. Cover the lid. Reduce to medium low heat and simmer for 10 minutes. Mix in thickening glaze. Serve in a pot.
 

Cooking tips:

Put the winter melon and white fungus on the bottom of the pot, this help them cooked thoroughly and more flavorful.
