Ingredients:
4 pieces Oxtail (about 350g), rinse
1 Onion, chopped
1 Carrot, peel and sliced
1 Tomato, cut to pieces
2 stalks Celery, cut to pieces
3 Bay leaves
1 cup Red wine
2 cups Beef stock
19g Rock sugar
2 tablespoon peanut oil
Seasoning Ingredients:
50g Tomato paste
1 teaspoon Light soy sauce
½ teaspoon Salt
Method:
Scald oxtail in boiling water and drain. Heat 1 tablespoon oil in a
wok or pan under medium heat, stir-fry onion, celery and carrot for 3
minutes or until fragrant. Set aside. Heat 1 tablespoon oil in a pot.
Put in oxtail and fry for 5 minutes or until fragrant. Add ½ cup red
wine, bay leaves, beef stock and rock sugar. Simmer for 1 ½ hours. Add
Seasoning Ingredients, tomato, onion, celery and carrot. Simmer for 1
more hour. Add the remaining red wine and cook for 15 minutes more and
serve.
Cooking tips:
During the cooking process, especially simmering, occasional
stirring the ingredient is required to prevent food from getting
burned.
Health tips:
Red wine rich in anti-oxidant, could prevent LDL cholesterol from
oxidized, thus could prevent heart disease and prevent cancer.
