Stewed Chicken with Straw Mushrooms Recipe

Ingredients:
½ Chicken, rinse and drain, then cut into pieces
150g Straw mushrooms, cut into halves, scald rinse and drain
2 slices Ginger
2 cloves Garlic (grated)
Scallion (sectioned)
2 tablespoon cooking oil (peanut or vegitable)

Seasoning Ingredients:
1 teaspoon Light soy sauce
1 tablespoon Oyster sauce
1/2 teaspoon Sugar
½ cup Water
Sesame oil
Ground white pepper

Marinade Ingredients:
½ teaspoon Salt
½ teaspoon Sugar
1 teaspoon Caltrop starch
1 teaspoon Light soy sauce
1 tablespoon Ginger wine
1 tablespoon Oyster sauce
2 teaspoon Oil
Sesame oil
Ground white pepper

Thickening glaze:
1 teaspoon Caltrop starch
2 tablespoon Water

Method:
Combine chicken with marinade ingredient, marinate for 30 minutes. Heat 2 tablespoon oil in a wok or pan, put in ginger, garlic and straw mushrooms and stir fry for 3 minutes. Sizzle with 1 teaspoon of wine and stir well. Put in chicken and stir fry for 2 minutes under high heat. Add Seasoning Ingredients and mix well. Turn to medium heat and simmer for 3 minutes. Stir in thickening glaze. Garnish with scallion and serve.

 

Cooking tips:

Fresh straw mushrooms should not stored in the fridge. This is because they grow in a warm environment and tend to turn slimy when the temperature get as low as about 15'C.
