Stew Chicken Chestnut Recipe

Preparation time: 5 minutes +60 minutes marinate

Cooking time: 30 minutes

500g chestnuts, remove the skin
3 slices ginger, remove skin, finely chopped
˝ chicken, cut into serving size
1 tablespoon Chinese cooking wine (Shaoxing wine, or could be replace with white wine)
1 teaspoon salt
1 teaspoon corn flour
1 tablespoon oil
125ml (˝ cup) water

Seasoning Ingredients:
1 teaspoon light soya sauce
˝ teaspoon sugar

Thickening Sauce ingredients:
1 teaspoon corn flour
2 tablespoon water
(mix well in a bowl)

Mix chicken with salt and corn flour, leave marinate for 60 minutes. Then scald the chicken but put into the warm oil for 20 second, remove, drain and set aside. Heat up oil in a frying pan . Stir fry ginger for 3 minutes or until fragrant. Pour in Shaoxing wine, follow by chicken until fragrant, sauté for 5 minutes. Pour in ˝ cup and Seasoning Ingredients, mix well and continue to stir fry. Add chestnuts and stir fry for 10 seconds. Transfer to a ceramic pot (casserole). Stew (slow cook) over low heat for 20 minutes. Thicken with thickening sauce. Serve hot.
