Ingredient:
600g Big fish head, chop into pieces, rinse and drain
375g Pumpkin, peel and seed, rinse and cut it into slices about 1cm
thick
2 slices Shredded ginger
1 tablespoon Shredded small red chili
1 tablespoon Shredded scallion
1 tablespoons vegetable oil
Marinade Ingredients:
1 teaspoon Salt
1 teaspoon Caltrop starch
1 tablespoon Ginger wine
1 teaspoon Sesame oil
1 pinch Ground white pepper
Method:
Arrange pumpkin on a serving plate. Mix fish head with Marinade
Ingredients, then arrange them over pumpkin. Sprinkle half of the
shredded ginger over it. Steam over high heat for 12 minutes. Drain off
any liquid on the plate. Put the remaining shredded ginger, scallion
and red chili over the fish head. Pour over 1 tablespoon boiling oil
and light soy sauce. Serve.
Cooking tips:
Do not slice the pumpkin too thin as they turn squishy easily after
cooked.
