Ingredients
1 (1.2kg) Dressed chicken
3 Black mushrooms (soaked in water until soft and shredded)
1 tablespoon Qi Zi
1 cup Chicken juice from steaming
2 slices Ginger, shredded
½ tablespoon salt
Seasoning Ingredients:
¼ teaspoon Salt
2 tablespoon Caltrop starch
1 teaspoon Sesame oil
1 pinch ground white pepper
Method:
Rinse chicken. Rub ½ tablespoon salt over the chicken. Steam the
chicken on a plate for 25 minutes. Remove from heat. Set aside with the
lid on for 10 minutes. Keep the liquid sauce on the plate, let cool for
later use. Add Seasoning Ingredients and mix well. Leave the chicken to
cool. Chop into pieces and arrange on the plate. Heat 1 tablespoon oil
in a wok. Put in shredded black mushrooms and ginger. Stir fry for a
while. Add a little sugar and stir well. Add Qi Zi and the sauce
remained from steamed chicken. Cook until it thickens. Pour on top of
the chicken and serve.
Cooking tips:
Stir fry dried black mushrooms in oil first bring out its
fragrance.

Qi Zi (Lycium) or Chinese Wolfberry provide nutrition needed by
kidney and eyes.
