Soybean and Saprerib Soup Recipe

Ingredients:
250g spareribs, wash and drain
500g soybeans
1.25 liter (5 cups) water

Method:
Clean and wash soybeans, soak with cold water for 3 ~ 8 hours. Rub the soybeans to remove the skin. Scald the sparerib: put the sparerib in a heat proof bowl; add in boiling water, drain. Add 5 cups water in a ceramic pot (casserole), bring to boil. Pour in spareribs and soybeans. Reduce to low heat and slow cook for 90 minutes. Add in salt while still hot and ready to serve.
