Ingredients
1 Smooth Loofah (400g), peel skin and cut into wedges
75g Straw mushrooms, cut a cross mark on top surface
75g Squids, rinse and cut light cross incision on the inner side
150g Shrimps, trim the rostrum, antennae and legs
150g Clams, brush nd rinse well
1 clove Garlic (sliced)
1 ½ cups Stock (get stock or soup
recipe in Anti Aging Recipes section)
Marinade Ingredient
¼ teaspoon Salt
½ tablespoon Caltrop starch
½ tablespoon Oil
Seasoning Ingredient
½ tablespoon Salt
1 teaspoon Sesame oil
1 pinch Ground white pepper
Method
Put mushroom into boiling water. Drain. Add into cold water and drain
off again. Mix squid with marinade ingredient. Heat up 2 tablespoon oil
in pan until hot, put squids and shrimps for 30 second, remove from oil
and drain with paper towel. Put clams into a heat prove bowl. Add boil
water. Drain. Add cold water and drain off again. Heat 1 tablespoon oil
in a clay pot. Stir fry garlic until fragrant. Add loofah and
mushrooms. Cook for 5 minutes or until done. Add in stock, seasoning
and boil it under medium heart for 5 minutes. Add in the shrimps,
squids. Boil it and serve in a pot.
Cooking Tips:
Smooth Loofah is refreshing sweet and is usually suitable for light
seasoned dishes, in order to keep its natural sweet.
