Red Rice with Pumpkin Recipe

Preparation time: 2 minutes + 3 hours soaking time

Cooking time: 15 minutes


1 cup (250ml) red rice, wash and soak for at least 3 to 4 hours, drain
cup (125ml) white rice, wash and drain
625g pumpkin, seed, cut into bit size pieces
80g baked cashews nuts

Mix red and white rice, cooked in rice cooker with 3 cups of water. Wash the peel and cut into pieces. When the rice is boiling, add pumpkin and close the cover immediately. When the rice and pumpkin mixture is done, mix well. Remove and sprinkle cashews nuts on top.

Red rice is highly nutritious, with high loading of vitamin B complex and fibers. It help in body detoxification.
