Jelly Fish Salad Recipe

Ingredients:
300g jelly fish
1 carrot, remove skin and finely shredded
1 Japanese cucumber, finely shredded
2 red chilies, thinly cut
Some ginger shreds, finely cut
Coriander leaves, finely cut
1 teaspoon salt
1 tablespoon sugar

Seasoning Ingredient:
1 teaspoon caster (light brown) sugar
1 tablespoon lemon juice
3 tablespoon toasted peanut, coarsely chopped
1 tablespoon sesame seeds
1 teaspoon sesame oil

Method:
Heat up a wok or pan, put in sesame seeds, stir fry without oil for 3 minutes over low heat or until fragrant. Remove and set aside. In a new bowl, add in salt and sugar into jelly fish, , and blanch by putting into a hot boiling water for 20 seconds, drain. Combine all remaining ingredients with seasoning and mix well. Serve cold.
